Thin Mint Trifles

About This Recipe

Juliette Gordon Low started Girl Scouts in 1912. That first troop consisted of 18 girls who all shared a sense of curiosity and a belief that they could do anything. That small gathering of girls over 100 years ago ignited a movement across America where every girl could unlock her full potential and make the world a better place. March 12th is National Girl Scouts Day commemorating that first meeting. March is also the month Girl Scout Cookies make their annual appearance.


Starting each January, Girl Scouts go door-to-door and among their families, taking orders for Thin Mints, Trefoils, Lemonades, and more. After orders are placed, Girl Scouts deliver cookies to their customers beginning in late February/early March. In addition, troops set up sales tables outside banks, stores, and in business districts to sell to the general public. My favorite story is that of an enterprising girl scout that set up her table in front of a cannabis shop and quickly sold out of cookies.

I love my GS cookies and have never missed a year of stocking my freezer with Thin Mints. I do this to support their fundraising efforts and because nothing is as tasty as frozen Thin Mints (yes, it’s a thing) with a glass of cold milk. But this year I have decided to experiment with the cookies for an upgraded dessert idea – a Thin Mint Trifle.

This recipe is sooooo easy that your own little Daisy, Brownie, or Jr Girl Scout can be making it themselves. Maybe they can prepare it as part of obtaining their own Cooking Badge?

Ingredients & Instructions


  • 1 box of Girl Scouts Thin Mint cookies, crushed

  • 1 package of instant pistachio pudding or vanilla pudding (your preference)

  • Milk (according to box instructions up to 2 cups)

  • 2-3 drops of green food coloring, more if using vanilla pudding (optional)


  1. Add thin mints to a large ziploc bag, and squeeze out the air and close bag. Using a rolling pin or meat mallet, crush the cookies to small pieces, being sure not to make too fine and crumbly.

  2. Prepare pudding mix following the instructions on the box. Add drops of food coloring to achieve desired green color.

  3. To layer your trifle: start with spooning a layer of thin mint crumbs on the bottom of the trifle glass then a few tbsp. of the green pudding, then layer again with thin mints and then the pudding. Top the trifle off with more thin mints, as desired.

  4. Cover with plastic wrap and chill in the refrigerator for a few hours or overnight. Enjoy.
