It was Super Bowl XXX, Dallas Cowboys versus Pittsburgh Steelers, and the year was 1996. We were hosting a Super Bowl get-together with friends, and I was looking for a fun new snack to serve beyond the ubiquitous cheese and crackers and crudités and dips. The charcuterie board sensation was not yet a hot trend. I found this recipe in a Sunday Telegram article on game day snacks and party decor the week before the Super Bowl game. Simply titled Tailgate Appetizer, these turkey roll-ups were the hit of our gathering. Since then, I have made these hundreds of times as they are much requested for family gatherings, pot luck events, and of course no Super Bowl party would be a party without them. This recipe made an immediate second appearance following the Super Bowl event at a Mardi Gras party. It was another win. Easy to make, simple to serve … these roll-ups are a TOUCHDOWN!!
4 flour tortillas
1 block 8 oz cream cheese (softened to room temperature)
2 tbsp to ¼ cup of salsa (thick varieties work best)
⅓ pound of thinly sliced turkey breast (you need 8 slices)
4-8 oz of fresh spinach (washed and dried)
3-4 stalks of green onions (thinly sliced white and green parts)
Combine salsa and softened cream cheese
Spread an even layer of cream cheese mixture over tortilla
Cover with a layer of fresh spinach
Place 2 slices of turkey on lower ⅔’s of tortilla
Sprinkle with a handful of sliced green onions
Tightly roll up tortilla starting on end with turkey, firmly pressing down seam to seal
Trim off ends for presentation purposes making a nice shaped log.
Chill for 15 - 30 minutes to firm roll. Can be served as a single sandwich or sliced into individual roll-ups. Each roll can be cut into 9-10 slices.
Variations:
Switch out salsa for 1 tbsp dried dill for cream cheese spread. Substitute deli ham slices for the turkey and exchange spinach layer for a dill pickle spear (placed on top of the ham).
I don’t remember who won that year’s Super Bowl, but this recipe is always top of mind to make any gathering a celebration.
