Healthy Halftime Spinach Balls

The month of January is typically known as a “fresh start” to the new year. Usually that means resolutions involving healthy eating habits and exercise. Coincidentally, it is also a challenging time of the year for those diet resolutions as it is time for all things football. We are consumed by watching the playoff games and participating in associated activities leading up to the Super Bowl that follows in February. Basically that means tailgating parties, halftime buffets, and spending a lot of time sitting on the couch in front of large screen TV’s. The journey to the Super Bowl isn’t about the teams; it’s all about the food. So to help with your New Year’s Healthy Resolutions and to still have a fun appetizer to share at your next football get-together, try these Healthy Halftime Spinach Balls. They fit the bill …. As in (subtle plug) Go Bills!

Ingredients & Instructions


  • 2 (10 ounces each) packages frozen chopped spinach

  • 2 cups herb stuffing mix

  • 1 large onion, chopped

  • 4 eggs, beaten

  • ½ cup butter, melted

  • ½ tsp thyme

  • 1 tsp garlic powder*

  • 1 tsp black pepper

  • ½ cup Parmesan cheese, finely grated


*Recipe can be adjusted by using 1 tbsp finely minced garlic instead of garlic powder. You could also add 1 tsp red pepper flakes for a little heat. I have also added chopped dried cranberries for a hint of sweetness.


  1. Thaw spinach and squeeze dry. (I use my salad spinner).

  2. Mix all ingredients together.

  3. Shape into small bite sized balls. (Makes 75-80 small balls or 25-28 meatball sized)

  4. Balls may be frozen at this point to be cooked later.

  5. Place balls on a parchment lined baking sheet and lightly spray with cooking spray.

  6. Bake in a preheated 350 degree oven for 10-15 minutes (small) or 25-30 minutes (larger sized).

  7. To serve, use a thin pretzel instead of a toothpick for the bite sized balls.

  8. Serve with mustard sauce of your choice. I use honey mustard mixed with a little sour cream.
