Each year, National Read Across America Day is celebrated on March 2nd, the birthday of Dr. Seuss. The annual event is part of Read Across America, an initiative on reading created by the National Education Association. Green Eggs and Ham was one of my favorite Dr. Seuss books, and my daughter’s. Written with only 50 different words about someone that does not want to eat green eggs and ham, it has been a childhood favorite for generations. It has also inspired notable chefs like Martha Stewart, Paula Deen, Rachel Ray and Ree Drummond, the Pioneer Woman, to create recipes for Green Eggs and Ham. I have created my own, with Pesto. Pesto is after all, made with olive oil and is the perfect medium to cook fried eggs. Olive oil replaces the butter ordinarily used to fry eggs.
Pesto - 2 tablespoons whether homemade or store bought.
2 Eggs
Black Pepper, Salt and Red Pepper Flakes to taste
2 Slices of Ham Handful of Arugula
Start by plating up a bed of arugula, and set the plate aside.
Fry up eggs as you normally would, but instead of butter or oil, use the pesto.
Season the eggs with black pepper, salt, and/or red pepper to taste and fry them to your preference. (I like the whites to be set, but the yoke to be runny).
Remove the eggs from the pan, and place them on the plated bed of arugula (to soak up the creamy, runny yolk as a dressing for the greens if you prefer your eggs this way).
Fry up the ham steaks in the same pan with the remaining pesto for added flavor.
Once cooked, add the ham on the side of the plate.
And there you have it, Seuss-Inspired Green Eggs and Ham.
So how does the story of Green Eggs and Ham end? Sam-I-Am convinces the unnamed man to try the eggs and they find they do like them.
