Quiche

About This Recipe

Feel like cheating? What can you cook with ranch dip and one “bloomin” onion?

I had recently purchased a container of Bacon Cheddar Ranch Dip without any purpose in mind. It was marked at a discount of $1.99 and I figured at the very least, it was going to be used for stuffed celery snacks or topping baked spuds at just pennies a taste. I had received a brunch invitation and was planning on bringing a quiche but didn’t want to take time to grocery shop. I had a crust, some eggs, frozen spinach, a slice or two of prosciutto and a lone onion hiding in my pantry. That’s when it hit me that the dip would make the perfect ingredient for Quiche. Quick, easy and oh so delicious. I will be making this again, maybe next time with dill flavored dip.

Cheddar Bacon-Prosciutto Spinach Quiche. Serves 4-6

Ingredients & Instructions

  • 1 crust (either fresh or frozen) Be sure to have at room temp.

  • 1 cup of flavored sour cream based dip or regular plain sour cream

(We used Sam’s Club Member’s Mark Bacon Cheddar Ranch Dip 24 oz)

  • 1 pkg of frozen spinach, thawed and well drained

  • 5 large eggs or 4 jumbo

  • 2 slices of chopped prosciutto (Ham or Bacon)

  • 1 small onion finely chopped and sauteed for 4 minutes in 1-2 tbs butter or oil

  • 1-2 tbs roasted garlic finely minced and sauteed with onions (see above)

  • 3-5 slices of thinly sliced swiss cheese (depending on size of each slice)

  • 1 cup of grated cheese of your choice (if not using a dip that already includes cheddar cheese)

  • 1 tbs of spice of your choice if using plain sour cream like dill or oregano

  • Salt and pepper to taste

  1. Preheat oven to 350 degrees

  2. Position crust in pan

  3. Cover bottom of crust with layer of swiss cheese slices

  4. Top Cheese slices with thawed and drained spinach, sauteed onions and roasted garlic

  5. In a mixing bowl, whisk eggs together, add chopped meat, grated cheese, 1 tbs spice of choice, salt and pepper.

  6. Pour egg mixture over the crust with spinach, onions, garlic and swiss cheese.

  7. Bake 30-40 minutes.

Add a salad and the quiche makes a great lunch or dinner or with griddled blueberry muffins (recipe soon to come) for a delicious breakfast or brunch. The ready-made ingredients provided by the chip dip makes it an easy dish to put together. It’s ok to cheat. Enjoy.
